Macadamia Berry Parfait
This nut based dessert is sweetened with a little Manuka honey known for its antimicrobial properties and is enriched with live bacteria with the addition of Bio Kult. Serve this as a sweet treat or breakfast option.
Suitable for: vegetarians, egg free, gluten free (check granola if using)
Preparation time: 10 minutes
Serves: 4-6
Ingredients:
- 250g macadamia nuts, soaked in water for a couple of hours then drained and rinsed.
- 2 oranges, peeled and pips removed
- 4 capsules of Bio Kult probiotic powder
- Selection of fresh berries – sliced strawberries, raspberries, blueberries, blackberries
- 2tbsp Manuka honey or Maple syrup
- Little toasted nuts or granola to serve
Method:
- Combine the nuts, oranges, honey and probiotic (empty the probiotic powder by pulling the capsules apart) in a blender and process until smooth and creamy. Add a little water to thin if needed.
- Either use straight away or you can leave it to ferment slightly by pouring into a jar and cover with a lid of muslin. Leave in a warm place for 8-10 hours to ferment.
- Layer four glasses with fresh mixed berries and the nut cream. Top with a few toasted nuts or a little granola to serve.
